Rum Infusions

In the Montanya Tasting Room, we make our own flavored rums by making infusions. It’s so simple, and allows us to create some pretty fantastic cocktails—including some of our customers’ favorites. Here are a few of our most commonly used recipes, along with links to featured cocktails:

Bunch of Basil

Basil Infusion

1 cup basil

1 bottle Montanya Platino Rum

Infuse for four days. Strain and decant. (Take care not to infuse longer than four days—left too long, this infusion can taste grassy.)

Cocktail Recommendation: Basil Paradisi

Cucumber Infusion

Half a cucumber, peeled, seeded and diced

1 bottle Montanya Platino Rum (750 ml)

Infuse for four days. Strain and decant.

Cocktail Recommendations: Teocalli, Cucumber Templar, and Caldera

Dr. Bob’s Snake Oil

Skewer one fresh lemon through with 1 Madagascar Vanilla Bean. Press 10 cloves into the flesh of one orange. Decant one bottle of Montanya Platino into a large 30+ ounce container. Add the fruit and 1/2 cup Turbinado sugar. Infuse four to five days, stirring occasionally.

Cocktail Recommendation: Dark Monk

Pineapple Habanero Infusion

1/4 of a fresh pineapple, skin removed, chopped into chunks

Half a sliced habanero pepper

1 bottle Montanya Platino Rum (650 ml)

Infuse for three days (or to taste). Reduce or increase habanero based on spice tolerance. Strain and decant.

Cocktail Recommendation: Fiery Passion

Jalapeno

Roasted Jalapeño Infusion

5 roasted jalapeños

1 bottle Montanya Platino Rum (750 ml)

Remove stems from all jalapeños. Remove seeds from four jalapeños. Finely dice in food processor. Add to Platino Rum and infuse for one week. Strain and decant.

Cocktail Recommendation: Cafe Picante

Topsider Infusion

1 long slice of orange peel

2 cinnamon sticks

1 vanilla bean

1 bottle Oro

Grind cinnamon sticks coarsely with mortar and pestle. Add all ingredients to Oro and infuse for three days. Strain and decant and refrigerate for up to 30 days.

Cocktail Recommendation: Sweet Tooth

Vanilla Beans

Vanilla Infusion

Place 1 or 2 long pods of Madagascar Vanilla Bean into 1 bottle of Montanya Platino Rum. Infuse indefinitely.

Cocktail Recommendation: The White Room
